Roast Chicken with Rosemary
A holiday classic! Nice and juicy with beautiful rosemary and citrus! I prepare turkey this way, too.
(Serves 5-8)
Ingredients
- 1 (1,3 kg) whole chicken, rinsed
- salt and pepper to taste
- 6 garlic cloves, grated
- 1 small onion, quartered
- 30 gr chopped fresh rosemary
- 1 large lemon (halved and zested)
- Butter and Olive Oil
Preparation:
Preheat the oven to 205 degrees C (400 degrees F).
In a bowl, combine butter, rosemary, garlic, lemon zest, salt and pepper. Mix until all the ingredients are combined.
Using your hand, separate the skin of the chicken breast and legs. You want to create a space in between the skin and the meat. Once you do, take the butter, place it under the skin, and use the skin to push the butter around. You want to create a butter layer in between the meat and the skin. This will season the chicken while keeping it moist.
Brush the outside of the chicken with the olive oil and season the outside and inside of the turkey with salt and pepper. Stuff the chicken with the garlic, onion, and lemon.
Roast in the preheated oven until chicken is no longer pink in the center and the juices run clear, 2 to 2 1/2 hours. An instant-read thermometer inserted into the center of chicken near the bone should read at least 74 degrees C (165 degrees F).
Remove your chicken from the oven and allow it to rest with a light covering of foil for 10 – 15 minutes before carving.
Serve with your favorite sides and gravy and enjoy!
